What you need:
2 Cups of Brown Rice
4 Cups of water
1 Teaspoon of salt
2 Boneless, skinless chicken breasts
1 Cup mixed vegetables
Directions: (Approximate cook time: 25 minutes; Serves 2-4 adults)
Bring water to a boil; add salt & rice.
Allow rice to reach a boil for 2 minutes stirring occasionally; simmer covered on low heat for 20 minutes.
Place cooked rice in a medium sized bowl.
While rice is cooking:
Prepare chicken, slicing the breasts into thin strips.
Season chicken lightly with seasoning salt.
Place chicken, along with vegetables, in a skillet.
Cook on medium-high heat until chicken is cooked thoroughly.
Place chicken & vegetables over cooked rice.
Eat and enjoy!
