Healthy Chicken Dish

Yum yum, come get you some! This dinner recipe of chicken, vegetables, and rice is a healthy & lean option for your next meal. What you need:

2 Cups of Brown Rice

4 Cups of water

1 Teaspoon of salt

Seasoning salt

2 Boneless, skinless chicken breasts

1 Cup mixed vegetables

Directions: (Approximate cook time: 25 minutes; Serves 2-4 adults)

Rice Instructions:

  1. Bring water to a boil; add salt & rice.

  2. Allow rice to reach a boil for 2 minutes stirring occasionally; simmer covered on low heat for 20 minutes.

  3. Place cooked rice in a medium sized bowl.

While rice is cooking:

  1. Prepare chicken, slicing the breasts into thin strips.

  2. Season chicken lightly with seasoning salt.

  3. Place chicken, along with vegetables, in a skillet.

  4. Cook on medium-high heat until chicken is cooked thoroughly.

  5. Place chicken & vegetables over cooked rice.

  6. Eat and enjoy!
