What you need:
Half of a 1/2-pound loaf whole-wheat French or Italian bread
1 Garlic clove, cut in half
2 Large ripe tomatoes, cored and chopped
1/2 Cup shredded mozzarella cheese (about 2 ounces)
1/2 Tbsp. olive oil
1/2 Tsp. dried oregano, crumbled
1/8 Tsp. freshly ground pepper
1/4 Cup freshly grated Parmesan cheese
Olives, mushrooms, Italian sausage, etc. (OPTIONAL)
Directions: (Approximate cook time: 15 minutes; Serves 2 adults)
Cut bread in half lengthwise; Then scoop out and discard the soft center.
Place bread cut side up on an ungreased baking sheet and toast in the broiler, 5 to 6 inches from heat, until lightly browned, 3 to 4 minutes..
Remove bread and rub with garlic.
While bread is cooking:
In a small bowl, combine tomatoes, mozzarella, olive oil, oregano, and pepper.
Spoon the mixture into each piece of bread and sprinkle with Parmesan.
Broil for 3 minutes.
