What you need:
1 Small bitter gourd (Rinsed in salted water; Sliced)
1/2 Tomato head or 1 Whole small tomato (Sliced)
1/2 Green pepper (Diced)
1/4 Onion (Diced)
1 Stalk spring onion (Chopped)
1/2 Chicken breast (Cut into strips) – Can be substituted for tofu, pork or beef.
1 Clove garlic (Minced)
1 Small lime
1 Small red chili (Minced)
2 Tablespoons of oil
1/2 Tablespoons of soy sauce
Salt & pepper (As needed)
Extra-virgin olive oil
2 Cups of brown rice; 4 Cups of water (RICE OPTIONAL)
Directions: (Approximate cook time: 15 minutes (With rice, 25 minutes); Serves 1-2 adults)
Add garlic and onions to infuse flavor.
Set chicken on the sides of the skillet, placing the sliced tomato in the middle; Wait another 3 minutes until you smell the tomato aroma.
Lower heat, and add soy sauce; Lightly toss the vegetables in the skillet.
