Sautéed Bitter Gourd & Chicken!

What you need:

1 Small bitter gourd (Rinsed in salted water; Sliced)

1/2 Tomato head or 1 Whole small tomato (Sliced)

1/2 Green pepper (Diced)

1/4 Onion (Diced)

1 Stalk spring onion (Chopped)

1/2 Chicken breast (Cut into strips) – Can be substituted for tofu, pork or beef.

1 Clove garlic (Minced)

1 Small lime

1 Small red chili (Minced)

2 Tablespoons of oil

1/2 Tablespoons of soy sauce

Salt & pepper (As needed)

Extra-virgin olive oil

2 Cups of brown rice; 4 Cups of water (RICE OPTIONAL)

Directions: (Approximate cook time: 15 minutes (With rice, 25 minutes); Serves 1-2 adults)

  1. Cook sliced chicken in a heated skillet with a small amount of olive oil for 3 minutes. (Or until slightly brown.) – If you would like to eat this meal with rice, place water on to boil and cook rice.

  2. Add garlic and onions to infuse flavor.

  3. Set chicken on the sides of the skillet, placing the sliced tomato in the middle; Wait another 3 minutes until you smell the tomato aroma.

  4. Add the rest of the vegetables, including the bitter gourd; Season lightly with salt and pepper.

  5. Lower heat, and add soy sauce; Lightly toss the vegetables in the skillet.

  6. Squeeze lime and sprinkle chili all over the meal.

  7. Serve, eat & enjoy!
