Shrimp, Grapefruit, and Avocado Salad!

What you need:

1 1/2 Cups of red grapefruit sections (About 2 grapefruits.)

3/4 Pound large shrimp (Cooked, peeled, and deveined.)

1 Avocado, peeled & cubed (Yields around 1 cup.)

4 Cups slivered romaine lettuce

2 Tsp. extra-virgin olive oil

Tbsp. minced fresh chives

Tbsp. fresh grapefruit juice

1 Tsp. clover honey

1/8 Tsp. ground white pepper

Directions: (Approximate cook time: 5 minutes; Serving size – 4 adult)

  1. Combine the grapefruit sections, shrimp, and chives in a medium-sized bowl, and set aside.

  2. In a small bowl, mix together the grapefruit juice, olive oil, pepper, and clover honey to make dressing.

  3. Place lettuce in a large bowl, and drizzle with dressing, tossing gently to coat; divide among 4 plates.

  4. Divide the shrimp mixture, avocado, and chives amongst each salad plate.

  5. Eat & enjoy!
