For this Mother’s Day, I was blessed with the opportunity to cook my Mom one of my VERY special healthy & delicious recipes! I rarely ever make my Grilled Chicken en Papillote with Citrus Salsa, because it’s so good and I never want to wear out my taste buds by eating it too much; but if Mother’s Day isn’t occasion enough for a man to bring out his best, then what is? This recipe is light but very filling, and the combination of tasty grilled chicken breasts and fresh, crisp vegetables is enough to keep even the most picky of eaters coming back for more!
Mom thoroughly enjoyed her meal, and I would like to thank Houweling’s Tomatoes of Camarillo, CA for shipping Tasty25 a ton of their amazing tomatoes & cucumbers to make this possible; which, by the way, we’re so good that I had to keep Mom from eating all of them before the recipe was completed! I’ve had this recipe under lock & key for a while, so make sure to show me some love by rating & commenting below, and trying it out and sending me a photo at firstname.lastname@example.org. I hope you enjoy, remember to remain food conscious each day, and Happy Cooking! – David Jones II, Editor of Tasty25 Magazine
