For this Mother’s Day, I was blessed with the opportunity to cook my Mom one of my VERY special healthy & delicious recipes! I rarely ever make my Grilled Chicken en Papillote with Citrus Salsa, because it’s so good and I never want to wear out my taste buds by eating it too much; but if Mother’s Day isn’t occasion enough for a man to bring out his best, then what is? This recipe is light but very filling, and the combination of tasty grilled chicken breasts and fresh, crisp vegetables is enough to keep even the most picky of eaters coming back for more!

What you need:
4 Boneless, skinless chicken breasts
1 Medium tomato (Seeded and chopped.)
1 Small cucumber (Peeled, seeded and chopped.)
2 Cups of chopped onion
1/2 Cup shredded parmesan cheese
2 Tbsp. finely chopped fresh cilantro
2 Tbsp. garlic powder
2 Tbsp. extra-virgin olive oil
1 Tbsp. fresh lemon juice
1 Tsp. salt
Directions: (Approximate cook time: 25 minutes; Serves 4 adults.)
Heat up the grill over medium flame, or coals.
Next, in a large bowl, combine the chicken breasts, olive oil, garlic powder, 1 cup of onions, and the additional 1/2 Tsp. of salt; Mix ingredients together evenly with hands.
Take your foil papillote with the chicken inside, and grill breasts until cooked thoroughly. (About 10-15 minutes.)
Once chicken is fully cooked, drain salsa mix, and serve immediately over the hot chicken breasts.
