It has just the right amount of flavor, and the cannellini beans make it really filling. This is delicious, and it only takes 10 minutes to make. Feel free to experiment with different dressings and seasonings.” –Colynn

What you need:

2 Cups cannellini beans, drained and rinsed

3/4 Cup small broccoli florets

1 Red pepper, diced

1 Yellow onion, diced

2 Cloves garlic, minced

1 Tsp. soy sauce

1/2 Tsp. olive oil

1 Tsp. garlic salt

Black pepper (Optional)

Directions: (Approximate cook time: 15 minutes; Serves 4 adults.)

  1. Heat the olive oil over high heat in a medium saucepan; Add the broccoli, red pepper, onion, and garlic.

  2. Next, add the soy sauce, salt, and black pepper (if desired) to the veggie mixture; Cook on high heat until cooked through and a little tender, but still crunchy.

  3. Pour the drained beans into a medium bowl, and add the cooked veggie mixture. Add Italian dressing if desired.

  4. Serve immediately.

  5. Eat & enjoy!
